Holy Guacamole!{15}
Because, really, what else would I call a post about guacamole? And really? This guacamole knocked my socks off. We had some with our dinner the other night and everyone (even those of us who WILL NOT eat tomatoes?) LOVED it. This recipe was inspired by the guacamole that Mr. Social Media and I had when we went out to dinner a few weeks ago. It was so much better than anything that you can buy in the store. . . and it looked so simple to me that I decided to give it a try. I was very impressed with my results. Please keep in mind that this is a totally made up recipe and that it may bear no resemblance to what you think must go into guacamole. . . Like my Saturday Sauce, this is just the way I do it. And my family really likes it!
Here you go:
I liked the guacamole so much that I made it again the next day. I was home alone and I had one extra avocado left over and still had some of all the other ingredients – so I made a mini batch and I ate the whole thing for lunch! There were only scraps of blue corn chips left in the pantry so I dumped them into the guacamole, mixed them up, and ate the whole she-bang with a fork. So. Good. I actually practically licked the bowl.
THIS IS HOW YOU MAKE IT
Just chop and pile the rest of the ingredients on top. I used three avocados, three cloves of garlic, three cocktail tomatoes, three tablespoons of finely diced (white) onion – but red would be better, three QUARTERS of a lemon, squeezed, and kosher salt to taste.
The way that you mix it all together may just be the most important part of this whole thing.
Don’t get too carried away. I like my guacamole to have big chunks of avocado in it. I think this kind of masher works best. It mashes some but not all of the pieces – as long as you don’t go over board.
I could barley get any pictures taken because there was someone waiting, with a chip in hand, to eat the fruits of my labor. . .
So, maybe you didn’t need a recipe for guacamole but maybe, like me, you just didn’t know how good and easy homemade guacamole could be! Really, I think you will be pleased if you give this a try. Want to try a smaller batch? Stick with the ratio you see above. I have now made it with one, two, and three, avocados and keeping the numbers the same, seems to work out really well. (one avocado, one cocktail tomato, one clove garlic, and so on. . .)

Yum. Yum. Yum. Yum. Yum! After taking lessons in Mexico, Hannah is our resident guacamole maker. Very similar delicious recipe. She does not use garlic (although we will try it ) but she does add a little cilantro. Again, yum!!

we have one STAUNCH non-cilantro eater in this house (it’s an adult) so, no-go on the ci-lan-tro! But oh, the garlic! If you like garlic – dice it very small and put in LOTS! and even more lemon is great, too!

It’s so funny that you just posted this. I made my homemade guacamole yesterday. It’s soooooo good. I use a lime instead of a lemon and I do add a lot of cilantro (my favorite!) but I saw that you said above that you have a cilantro hater so you can’t. I also roast the garlic in the oven for 45 minutes first if I have the time, although I didn’t yesterday. AND, yesterday I added a little Tabasco. It was the best batch yet!

Looks so delicious. I don’t think that I ever make guacamole the same way twice. I use lime instead of lemon and sometimes a bit of fresh chopped jalapeno. What matters is if you and your family like it–I haven’t met any (real) guacamole police yet.
